MAY 4, 2026 MEAL PREP MONDAY.
Meditteranean Chicken Salad:
2 lbs shredded chicken breasts
1/2 red onion, chopped
1/2 cup pepperoncinis, sliced
1/2 cup banana peppers, sliced
1/3 cup kalamata olives
1 cucumber, chopped
1/2 cup feta cheese
Fresh dill, chopped
1 cup Plain Greek Yogurt
1/4 Cup Avocado Mayo
1 Lemon, Juiced
1 tsp garlic powder
1 tsp onion powder
Dash of salt
Shred your chicken (you can use a rotisserie chicken too!) and place in a large bowl.
Add in your chopped red onion, pepperonicinis, banana peppers, olives, chopped cucumber and feta.
Add in your yogurt, mayo, lemon juice, and seasonings and top with chopped fresh dill. Mix altogether until well combined.
Store in an airtight container for the week and enjoy with cheese and crackers, in a sandwich or a wrap!
Sausage and Cheddar Cheese Breakfast Bagels:
6 Bagels
10 Eggs
1 cup Low Fat Cottage Cheese
1/2 Cup Milk
6 Slices Cheddar Cheese
10 Amylu Chicken Sausage Links
Salt and Pepper
Cook your chicken sausage according to the instructions. Chop into small pieces.
Preheat your oven to 350 degrees.
In a baking dish, add in your eggs, cottage cheese, milk and seasonings. Mix until well combined. Add in your cooked chicken sausage and mix.
Place in oven at 350 degrees for 25-30 minutes until egg mixture is set.
Lay out your bagels.
Divide your egg mixture into 6 slices. Place each slice on a bottom side of bagel.
Add a slice of cheddar cheese onto the top of each one.
Place the top on top of the cheese and place back in the oven for 7 minutes until cheese Is melted.
Wrap in parchment paper and store in fridge/ freezer. Only place in fridge if you are going to enjoy them all over the next day or two!
If freezing, make sure to pull out the night before you want to enjoy so it has time to thaw out in the fridge overnight!
Monster Cookie Protein Balls:
1 1/2 cups rolled oats
1/2 cup Creamy Peanut Butter
1/3 Cup Maple Syrup
1/3 Cup Mini Chocolate Chips
1/4 Cup Mini M&Ms
1 tbsp Cocoa Powder
2 tbsp Chia Seeds
2 Scoops Promix Chocolate Protein (Discount: KATIEY10)
1 tbsp Vanilla Extract
1-2 tbsp Milk of choice (only for consistency!)
In a large mixing bowl, add all your ingredients together and mix until well combined. Make sure to add your tbsp of milk one at a time to get the wanted texture- don’t add too much too fast!
Take out and roll 1 tbsp sized balls and place them into a container.
Store in fridge for at least 2 hours before enjoying!
