Cottage Cheese Monster Cookie Mousse:

Chocolate Cottage Cheese Mousse:

  • 16 oz cottage cheese

  • 3 tbsp Peanut Butter

  • 1.5 servings Chocolate Protein Powder

  • 3 tbsp maple syrup

  • 1 tsp vanilla extract

Ganache

  • 3 tbsp Hu Dark Chocolate Gems + 1 tbsp Peanut Butter

Mini Monster Cookie Dough Balls

  • 1/4 cup Peanut butter

  • 1 serving Vanilla Protein Powder

  • 3 tbsp Maple Syrup

  • 1 tsp vanilla extract

  • 2 tbsp Dye Free Chocolate Gems

Blend cottage cheese ingredients together until smooth, scraping the sides as needed. Pour cottage cheese mousse into small jars. Refrigerate at least a few hours, or overnight for optimal thick texture. Melt peanut butter & chocolate together for 30-45 seconds until smooth, then pour overtop mousse. Mix cookie dough ingredients together, roll into small balls, add to the top of the melted chocolate, and enjoy throughout the week.


Mini Shredded Chicken Burritos:

  • 3 pounds chicken breasts

  • 1 taco seasoning packet

  • 1 lime, squeezed

  • 1 block low fat cream cheese

  • 15 tortillas

  • Shredded cheese

Add your chicken, taco seasoning and lime juice into a crockpot and cook on high for 4 hours. Shred once done cooking.

Lay out all your tortillas. Add a sprinkle of shredded cheese to each tortilla.

Evenly place shredded chicken onto each tortilla and roll into a burrito

Place fold down on a medium heat skillet to help keep the fold closed.

Place in a container and in the fridge for 4-5 days or freeze and reheat as needed!

Cinnamon Roll Pancake Bowls:

(Per bowl)

  • 1/3 cup Kodiak cakes

  • 1/2 cup plain low fat Greek yogurt

  • 1 egg

  • 2 tbsp milk of choice

  • Cinnamon

  • 1 tsp vanilla

FOR all 3 Bowls:

For the Cinnamon Swirl:

  • 1 tbsp Melted Butter

  • 1 tbsp Brown Sugar

  • Lots of cinnamon

  • 1/2 tsp vanilla

  • 1 tbsp water

For the Maple Syrup Frosting:

  • 4 tbsp Cream Cheese

  • 1.5 tbsp melted butter

  • 2 tbsp maple syrup

  • Cinnamon

  • 1 tsp vanilla

  • 2 tbsp water

Preheat your oven to 350 degrees.

In 3 meal prep containers, add all your pancake ingredients into each one. The ingredients listed are PER bowl.

Mix until well combined

In a small bowl, combine your ingredients for the cinnamon swirl. Mix until the brown sugar is melted and well combined.

Evenly pour the cinnamon swirl mixture over all 3 of the pancake bowls!

Bake in the oven for 20-25 minutes until center is firmed.

While the pancakes bake, in another bowl, combine the ingredients for the maple syrup frosting.

Mix until the cream cheese is dissolved and everything is well combined.

Pull out your pancakes and let cool.

FOR THE FROSTING: you can either store the frosting separately in the fridge and add 1/3 on top when ready to enjoy a pancake bowl, or evenly pour the frosting on top of each pancake and store them in the fridge and reheat when ready to enjoy!
