March 30, 2026 meal prep monday.
Copycat Reeses Egg:
2/3 Cup Peanut Butter
1/3 Cup Almond Flour or Coconut Flour
1 tbsp Vanilla Extract
1 Cup Milk Chocolate Chips (I use the JustDate or Hu Brand for No Added Sugar!)
1 tsp coconut oil
In a bowl, Mix together your Peanut Butter, Maple Syrup, Flour, and Vanilla Extract.
Scoop out a little at a time and form into an egg shape and place on parchment paper.
Freeze for about 15 minutes just so it will be easier to dip in the melted chocolate.
In the microwave, add your chocolate chips and coconut oil to a bowl and melt in the microwave.
Evenly coat all the Reeses eggs into the chocolate and place back in the fridge for at least an hour before enjoying!!

In a medium skillet, cook your ground beef. Add in your taco seasoning once almost cooked through.
In 6 meal prep containers, evenly divide the potatoes, ground beef, shredded cheese can of black beans, tomatoes, and cilantro in each container.
Add a lime wedge to each container and store in the fridge for up to 5 days.
