APRIL 13, 2026 MEAL PREP MONDAY.

Chocolate Strawberry Blended Chia Seed Pudding:

For the Chocolate Chia Seed Pudding

  • 1/3 Cup Chia Seeds

  • 1/2 Cup Plain Greek yogurt

  • 1 Scoop Chocolate Protein Powder

  • 1 tbsp Cocoa Powder

  • 1 tbsp Maple Syrup

  • 1 Cup Milk of Choice

  • 1 tbsp Peanut Butter

For the Strawberry Chia Seed Pudding:

  • 1/3 Cup Chia Seeds

  • 1/3 Cup Plain Greek Yogurt

  • 1 Scoop Vanilla Protein Powder

  • 1 Cup Milk of Choice

  • 6 Strawberries

  • 1 tsp Vanilla

  • 1 Tbsp Maple Syrup

In a blender, add all ingredients for your chocolate chia seed pudding and blend until pudding thickens up just a bit!

Evenly distribute the Chocolate Chia Seed Pudding into 4 Overnight Oats Jars.

Clean your blender and now add all the Strawberry Chia Seed Pudding ingredients to the blender and blend until it thickens just a bit.

Evenly divide your strawberry chia pudding on top of the chocolate pudding.

Chop 4-5 strawberries and evenly divide them into each container.

Add a sprinkle of chocolate chips.

Store in the fridge for the week and enjoy throughout!

Sweet Potato Ground Turkey Boats:

  • 5 Sweet Potatoes

  • 1.5lb Lean Ground Turkey

  • 1/4 Red Onion, Chopped

  • 1 Packet Taco Seasoning

  • 1 1/4  Cup Shredded Mexican Cheese (1/4 cup per boat)

Toppings (for when ready to serve):

  • Avocado, Sour Cream (or cottage cheese!), cilantro

Preheat your oven to 400 degrees.

Rinse your sweet potatoes, poke some holes in each with a fork and place in oven for about 45-50 minutes until sweet potatoes are cooked all the way through!

Over a medium skillet, add 1 tbsp of olive oil and place your ground turkey in. Once halfway cooked, add your taco seasoning and cook until turkey is cooked all the way through.

Chop your red onion into small pieces.

Divide your sweet potatoes into a meal prep container (if using this for a meal prep!).

Cut your sweet potatoes in half.

Evenly divide the Turkey onto each sweet potato.

Top each one with 1/4 cup shredded Mexican cheese and onion.

When ready to eat, add 1/2 avocado, a scoop of sour cream or cottage cheese, cilantro and a squeeze of lime and enjoy!

Cookie Dough Protein Balls:

  • 1 Cup Almond Flour

  • 2 Scoops Vanilla Protein

  • 1/4 Cup Maple Syrup

  • 2 Tbsp Melted Butter

  • 2 tbsp Creamy Peanut Butter

  • 1/4 Cup Mini Chocolate Chips

  • Pinch of Sea Salt

For the Melted Chocolate:

  • 1/3 Cup Chocolate Chips

  • 1 tbsp Coconut Oil

Melt your Butter in the microwave for a minute.

In a large bowl, add in all your main ingredients and mix altogether.

Scoop out 1 tbsp sized balls of cookie dough and place on parchment paper.

In a separate small bowl, add in your chocolate chips and coconut oil and place in microwave for a minute and take out, mix and place back in for 30 seconds to 1 minute until all chocolate is melted.

Drizzle chocolate on top of each ball and place in the fridge for an hour to set.
