MAY 25, 2026 MEAL PREP MONDAY.

Chocolate Chip Pancake Muffins:

  • 1.5 cups pancake mix

  • 2 bananas, mashed

  • 2 eggs

  • 1/3 cup maple syrup

  • 1/2 cup milk of choice

  • 1/4 cup peanut butter

  • 1 tbsp vanilla

  • Cinnamon

  • 1/3 cup mini chocolate chips

In a large mixing bowl, add your bananas and mash.

Add in the rest of your ingredients and mix until well combined.

Preheat your oven to 350 degrees.

Line your muffin tin with muffin liners and evenly distribute the mix into each muffin tin.

Bake at 350 degrees for about 15-18 minutes until cooked all the way through!

Enjoy! And store in the fridge and reheat during the week.

Sheet pan chicken fajitas:

  • 1.5 pounds chicken breast

  • 4 bell peppers

  • 1 yellow onion

  • 1 packet fajita seasoning

  • 1 cup rice

  • 1 lime, quartered

Cook your rice according to the directions on the package.

Preheat your oven to 400 degrees.

Chop your onions and bell peppers

Add your bell peppers and onions onto a sheet pan.

Cut your chicken into bite sized pieces.

Place on the baking sheet and top all veggies and chicken with your fajita seasoning.

Bake at 400 degrees for about 20 minutes, until chicken is cooked through

Bring out 4 meal prep containers and evenly distribute the rice, chicken, bell peppers and onions into each one. Place 1/4 lime wedge into each container.

Reheat and enjoy throughout the week.

Blueberry Cheesecake Chia Pudding:

  • 1 cup blueberries + more for topping

  • 1 cup cottage cheese

  • 1 serving vanilla protein powder

  • 1 cup milk of choice

  • 1/3 cup maple syrup

  • Cinnamon

  • 3/4 cup chia seeds (1/4 in each jar!)

  • Extra blueberries + some shredded coconut for on top

In a blender, add your blueberries, cottage cheese, vanilla protein powder, milk of choice, maple syrup and cinnamon. Blend until completely smooth.

Set out 3 jars and evenly pour the milk mixture into each one.

Add 1/4 cup chia seed to each jar and mix until well combined.

Place in fridge to let set and top with blueberries and shredded coconut.

Enjoy throughout the week!
