JUNE 29, 2026 MEAL PREP MONDAY.
Frozen Firework Oreo Ice Cream Cups:
1 tub whipped topping
2 servings Vanilla Protein Powder
1 tbsp Vanilla
3 Oreos, crumbled (I used the Catalina Crunch brand)
A handful of red and blue dye Unreal Milk Gems (m&ms), smashed
Take out the whipped topping from the freezer. Mix in two scoops of vanilla protein powder and vanilla. Add in 3 crushed Oreos and mix well.
Evenly distribute whipped topping into 8 muffin liners.
Top with smashed M&Ms and freeze for at least 3 hours. Enjoy!
Street Corn Chicken Salad:
1.5 Pounds Chicken Breasts
2 cans Corn
1 cup Cottage Cheese
1 cup chopped tomatoes
1/2 red onion, chopped
1 lime, squeezed
Handful of Cilantro
Cotija Cheese
1-2 small avocados
Taco Seasoning (for chicken)
Season your chicken with taco seasoning.
Add 1 tbsp olive oil to a medium skillet and cook chicken breasts until cooked all the way through.
In a blender, add in your cottage cheese, avocado, cilantro and lime juice. Blend until smooth.
In a large mixing bowl, add your corn, red onion and tomatoes. Top with your blended street corn mixture and about 1/3 cup Cotija cheese. Mix until well combined.
Once chicken is done cooking, cut into small bite sized pieces and place inside the bowl and mix until well combined.
You can serve as is or evenly distribute into 4-5 meal prep containers and enjoy for 2-3 days stored in the fridge!
Strawberry Chia Seed Parfait (Red white + Blue themed!):
1 cup chia seeds
1.5 cups milk of choice
2 tbsp honey
1 tbsp vanilla
Cinnamon
4 servings Vanilla Greek yogurt
1 cup (+ extra for the jar) of strawberries
1 cup blueberries
In a blender, add your chia seeds, milk, honey, vanilla and cinnamon. Blend until everything combined.
Two out 4 overnight oats containers.
Evenly distribute the chia pudding to the bottom of each one.
Add a handful of chopped strawberries on top of each.
Add 1 serving of Vanilla Greek yogurt on top of the strawberries in each jar.
Top with a handful of blueberries.
Store in the fridge and enjoy throughout the week!
